The reaction of polyglycerol with fats, oils, or fatty acids produces E475. The resulting product may contain mono-, di-, and triglycerides, along with free glycerol and fatty acids.
Food manufacturers widely use fatty acid esters as structuring agents, complexing agents, humectants, anti-foaming agents, and anti-splatter agents.
Polyglycerol polyricinoleate primarily acts as a viscosity-modifying agent.
It also helps stabilize emulsions in oil–water systems with a very high water content.
